Dinner: Frozen 1/3 bag of organic spinach, a fried egg and white rice. $0

Today I ate the food that I already have from a while back and I predict this will be the trend for the first 2 weeks. I don’t have a lot of food saved up/in freezer as I like fresh food and cook frequently, so I’ll get creative on what to do with the stuff I already have. Dinner was easy to make and I thought maybe worth sharing my recipe:
1/3 bag of frozen spinach
a cup of rice
an egg
Put the rice and water in the rice cooker and press the ‘Cook’ button. Throw the frozen ‘block’ of spinach on a frying pan on low and break it up with a spatula, stir frequently until it thaws, about 5 minutes. The stove can be set to medium to cook off the excess moisture faster. When the moisture is almost gone, stir in a little butter, then a little soy sauce. Stir some more and push the spinach off to one side, then add a little oil & crack an egg on the other side. Turn the stove down to low and put the lid on. I like my egg to a little runny so this “steams” it without actually frying it. Shut the stove off after 5 minutes and wait for the rice to be done, then put the spinach and egg on top of the rice. Add a little sesame oil if you desire.
